I love zucchini but each summer I seem to grow tired of stir-fry and zucchini bread before exhausting our supply. My husband came up with this delicious and easy appetizer that is a nice alternative to the standard zucchini recipes.
If he was going to propose to me all over again, I think he should put the ring in the center of a platter like this.
Slice the zucchini (about an inch thick) and place directly on a 400-degree grill for approximately four minutes.
Then flip, put a dollop of goat cheese and a cherry tomato on each piece, and grill for an additional eight or nine minutes.
The grill gives the goat cheese a light crust so you bit into creamy, tangy goodness. Enjoy!
Recipe:

- Grill for approximately 8 or 9 more minutes at the same temperature until goat cheese is soft and lightly browned.
